Beef Stew is an old Anglo Indian/British recipe. Its similar to a beef casserole but more soupy. It is a light and easy meal to prepare and good for digestion. It can be served to people who have been sick or for little children. Its a comforting meal during winter too.
Ingredients:
500 grms beef (stewing steak or topside) – diced
2 onions – finely chopped
250 grm potatoes – halved/quartered
2 carrots – chopped in chunks
200 grm green beans – chopped
2-3 tomatoes – halved
200 grm Cauliflower pieces chopped – optional
1 Choko (peeled and chopped) – optional if not available
Celery – 1-2 small pieces (optional)
Garam masala – cloves, bay leaf, cardamon, cinnamon (few of each)
Ginger – 1 inch piece grated
Garlic – 2-3 cloves chopped
Cooking oil 2 tablespoons
Method:
In a medium sized pot (5 litre pot), add oil, heat gently, add finely chopped onion. Stir lightly, add ginger, garlic and garam masala. Stir for a minute or two, add meat and mix well for a few minutes while stirring the pot. Add a little water and cover the pot. Cook gently for about 5-10 minutes. Do not let it burn. Add vegetables and stir well for a few minutes, till a light brown in colour and a thick gravy. Add water or stock to cover. Add salt to taste. Cover pot and allow to cook for 15-20 minutes.
Turn off heat, add pepper, a little chopped parsley or coriander.
Serve with steamed rice or bread rolls.
Serves 4-6 people.
Suitable to freeze.
